Vietnamese Spring Rolls

Mission: Perfect Maman

Vietnamese spring rolls are so yummy and so easy! Never made them before, until I went to a party last week-end, and the host was making them in the kitchen. I decided to give it a go and was not disappointed!

Recipe for Vietnamese Spring Rolls – 5 pieces

  • Rice noodles / vermicelli 50g
  • Rice paper wrappers (5)
  • Prawns (10)
  • Mint (10 leaves)
  • Avocado (1)
  • Cucumber (1)

Cook the rice noodles / vermicelli (usually 2 minutes in boiling water, but check the instructions on the one you buy!). Let them cool down a bit.

In the mean time, cut your prawns in half, smash your avocado, wash your mint leaves and cut your cucumber up in thin stick pieces.

Fill a tray with warm water and wet your rice paper wrappers one by one. Put them on a plate with kitchen paper towels to dry them.
